Abraham Salum has been busy travelling South America and gearing up for his next appearance at the James Beard House in New York. This time Salum will be taking along his Komali executive chef Anastacia Quinones (AQ to you and me).
AQ has been busy herself this time beefing up the menu and staying open late on Sunday evenings where she is throwing down some wonderful specials such as this plateful of pork ribs that are near silly spicy with habanero peppers. We sampled the ribs last night and they were killer good, but made us weep in our salad. AQ said this was her third incarnation of the ribs as some guests said the first two versions weren’t spicy enough. These are plenty spicy. You can ask for a toned down version and AQ will comply.
AQ serves up this plate of Costillas de Puerco along with a side of very mild sautéed cactus and a serving of mashed potatoes infused with queso fresco.
As for Sunday evenings, it is also Komali’s Industry night. Bring some proof that you labor for the public in the food industry and your meal will be half price. There are also plenty of cocktail specials mixed up by the very capable bar manager LeeAnn Berry, who also has the usual distinction of making the best margarita in Dallas. Don’t believe us? Try one.
